Penang Fried Oyster


Fried Oyster is a dish, usually taken as an accompaniment, popularly found at Penang hawker stalls and coffee shops. It is really oyster omelette, using fresh, succulent (the better stalls, anyway) oysters fried in an egg omelette. It omelette is made of a mixture of egg and starch, giving it a gooey consistency. Garnished with coriander or parsley, the fried oyster is usually served with a dip made of chilli sauce and garlic paste.
